ACTUAL blog

So I really haven't had a ton of time to just type out all the things in my life right now so I have been vloging about it... not that people care at all what I am doing, but it feels good to talk about it and actually see what I do with my life. Later on I will look back at these days and have memories of... every single day in April lol! (Well only 1/2 this year because I started VEDApril *vlog everyday in April). It's going to be interesting as this generation gets older to see all the things that we almost go back in time and see the past. Video's of our kids are easier than ever to record with the new phone technology so I know that is something I am going to enjoy. Kind of went on a side note there that wasn't intended but I am not disappointed in my thought process lol!

SO today I planned on having a nice rainy day (despite the fact that the rain ruined my farmers market plan) just hanging out in comfy clothes, no make up and a ton of cooking for the rest of the week and then yet again my plans were interrupted. I got a call for a same day interview! I had about 1 hour and 45 minutes to get ready and be at the interview. Actually thinking about it... if I hadn't had plans to go to the market with my friend I probably wouldn't have showered and blow dried my hair and it would have been pretty stressful to feel prepared for an interview. Shows I really have no control over life lol! Who does... (rhetorical question)?

So I get ready and head to the interview... this was a very different interview from any other interview I have ever had because of the environment. It is a shop type setting and I will (assuming I get the job) be doing the office work for. Not your typical cubical, dress nice or semi nice type office. I like this because as my mother in law pointed out, I don't have to spend money on new office attire. I have very limited options at the moment because of baby and weight loss so this is really a good thing. Also I love jeans! And who says I can't look cute at this job? No one! But at least I can choose to be comfy or cute (not that those never go together lol). It's just nice, that's all I am saying.

I think the interview went really well but as I said this is not the typical office interview. It seemed like he was making sure I was ok with the work place more than the questioning my ability (my resume does speak for itself but usually not like this). But I am not really sure about any of it. All I know is I can SO do the job and the hours will be perfect... pay will be better than none at first but if he is telling the truth that will go up. Still not as much as I was making but I am not looking to make a ton of money (but not objecting it either) I just want a job that allows me to be a mostly stay at home mom, keep daycare costs down or not have any and help out more with our monthly budget. I really pray this works out... there isn't much out there period, let alone something that will actually make a profit by avoiding daycare between my husbands shifts and mine. I will find out by Friday he says, but I kind of hope it's a no brainer and he calls me and offers the position tomorrow... wishful thinking I know but hey "It could happen".

If I do get the call I am employed I start Saturday... this Saturday... as in 2 days from now! SCORE!!! Money right away! Can't really beat that at this point.

I have other things to blog about but it's pretty late and I need to try and get to sleep because my daughter can't sleep past 6am lately! Erg,,, I hate mornings...

Oh yeah, I am not reading over this post to look for errors just so you are aware if you find some!

Vlog Blog 3 FRIED RICE!!



Start to Finish: 30 minutes Makes: 6 side dish servings 
Ingredients: 2 eggs, beaten
1 tsp soy sauce
1tsp sesame oil or vegetable oil
1 clove garlic, minced
1 tbsp cooking oil
1/2 cup thinly bais-sliced celery (1 stalk)
1 cup sliced fresh mushrooms (I left these out bc I was out)
1 8.8oz pouch cooked white rice (2 cups)
1 medium carrot, shredded
1/2 cup frozen peas, thawed
2 tbsp soy sauce
1/4 cup cup sliced green onion (2)

Directions:
1. In a small bowl combine eggs and the 1 tsp soy sauce
2. Pour the sesame oil into wok or large skillet. Preheat Over medium heat. Add the egg mixture and garlic; stir gently to scramble. When set remove egg mixture from wok and cut up and large pieces. Remove wok from heat.
3. Pour the cooking oil into wok or skillet. (Add more oil if necessary during cooking.) Return to med-high heat. Stir-fry celery in hot oil for 1 minute. Add mushrooms; stir-fry for 1-2 minutes more until vegetables are crisp-tender.
4. Add cooked rice, carrot and peas. Sprinkle with the 2 tbls soy sauce. Cook and stir for 4-6 minutes or until heated through. Add cooked egg mixture and green onion; cook and stir for about 1 minute more or until heated through.

Nutrition:
Per 2/3 cup: 141 cal 6g total fat (1 g sat fat), 71 mg chol., 418 mg sodium, 18g carbo., 2g fiber, 5g pro.
Daily Values: 31% vit. A, 8% vit. C, 3% calcium, 5% iron
Exchanges 1/2 Vegetable, 1 starch, 1 fat

I added Garlic baked chicken. I used chicken breast a bit of light olive oil and sprinkled garlic salt on both sides, poked it through a bunch with a fork and then used ms. dash garlic and herb and sprinkled it on both sides and then spread around. Baked in 350 degrees in the oven for about 25-30 minutes.


IT IS SO GOOD!!! TRY IT!!!

Making Taco Shells by frying in light olive oil



Re-fried organic black beans and 80/20 ground beef with taco seasoning
Colby jack cheese, cilantro, avocado, salsa, sour cream, black beans
YUM!



Seasonings in sauce, also fresh pressed garlic. I don't measure
1 lrg can tomato sauce,  2 reg can diced tomatoes then add flavor with spices
Italian Sausage

Spinach, chop up and then steam until loose and  dark green

put sauce at bottom of 9X13 before meat is added
Added meat and spinach to sauce

grilled up some mushrooms with light olive oil
Secret Weapon is cottage cheese instead of ricotta 


Layer how ever you want as long as it got a ton of colby jack and mozzarella  cheese mix, I used whole wheat noodles and bake covered with foil for 15-20 minutes and then uncovered for 10 minutes

Good day(s)

Today was a great day! A few things happened that were really great! #1 I actually had a nice person help me at the DMV! I KNOW RIGHT!?! CRAZY!!!  If you follow me at all you know financially times have been hard for us, so back in August '11 both are cars were due for registration and one also needed a smog... Yesterday I finally got it smoged and today I finally got it registered... So I had late fee's bringing it to $174.00. The nice DMV lady asked if I had ever been late before and I said no and we only were because my husband lost his job. She then gave me a form and told me to write out why would didn't pay our registration on time. She took away the late fee's which brought it to $101.00!!! $73.00 difference! I was REALLY happy, she also helped me with a few other things she didn't need to take time to do because most DMV workers I have had... EVERY DMV worker I have ever had doesn't care they just do what you got your number for and get you out of their face as fast as possible and are as rude as they can possibly be. Also we got a rear-view mirror for that same car because some weird-o thought it might be worth something to steal the WHOLE thing... even the sticky thing that keeps it on the windshield... some people.

#2 I also made a weekly meal plan and got most of the ingredients for the next week tonight. I will be going to 2 more stores tomorrow to complete my list but It feels really good to kind of map out the week again, gives me some sort of thing that is consistent which is nice. This week we will be having taco's, lasagna, chicken Alfredo, cheesy macaroni bake (recipe in a post from January or February) and fried rice for dinner. I also have breakfast and lunch meals planned out but the only new thing I am trying besides sandwiches and cereal is BLT pasta salad. Looked good and pretty healthy so it should be fun and easy to make. I hope to get pics and blog like I did a few months ago, but I want to get on a schedule and keep it up.

As of yesterday we are all moved in to our new residence, and surprisingly it is going better than I thought. It still seems a little crazy because of all the things I need to get organized and unpacked and we need to make another trip to put things we wont need for the next 6 months into storage but I hope to get all of it done with in the week. I have been doing things like crazy and I can't believe there is still a ton more! Things are crazy but pretty good. I can't wait for things to get done and slow down for a bit... Maybe I can just sleep for a whole day and rest up lol!
